Pan Fried Crispy Noodles with Beef & Vegetable (Pho Ap Chao)



This is one of my favorite childhood snack.  Traditionally, the white rice noodles are deep fried to a golden crisp, but for a healthier version, I prefer to pan fry them, the result is lighter but still crunchy on the outside, and soft on the inside.
